Radish Salad with Watercress
1 pound white or red radish
2 tablespoons vinegar
2 tablespoons oil
Freshly ground pepper
Trim and peel the radishes and cut into thin slices or finely shred the radishes on a grater.
Add the radishes to a bowl and season with salt. Allow to sweat for 10 minutes, then drain.
Pour the vinegar and oil over the radishes and season with salt and pepper. Wash the watercress and drain well. Mix the watercress under the salad or sprinkle over the salad before serving.
